# 1. Chocolate Waffles

  • 2 cups flour
  • ½ cup cocoa powder (unsweetened)
  • ¼ cup brown sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 3 eggs
  • 2 cups butter milk
  • 1 tsp vanilla extract
  • 6 ounce finely shredded bittersweet chocolate

To prepare this recipe, the oven needs to be pre heated to 250 degrees. Ingredients like flour, brown sugar, cocoa powder, baking soda and powder and salt need to be whisked together in a large bowl. Egg yolks need to me added to a well made in the centre of the mixture. Oil, buttermilk and vanilla also need to be added. Using a fork, it should be blended well and then dry ingredients need to be added to the mixture slowly and gradually. An electric mixture can be used for beating eggs till soft peaks are visible. Egg whites need to be folded neatly with the mixture till it joins seamlessly. Then, fold finely shredded chocolate. Hot waffle iron should be kept ready. Before adding mixture, it can be lightly coated. A wire rack ready just beside the oven can be used for transferring waffles. It can be covered loosely with a foil and serve hot with syrup and butter.

# 2. Blueberry Lemon Muffins

This is another tasty treat for your mother. A zest of lemon and subtle flavor of blueberries makes this dish tasting heavenly. A perfect blend of butter with blueberries make the muffins taste better. To make blueberry lemon muffins, following ingredients are needed-

  • 2 cups flour
  • 3/4 cup brown sugar
  • 1 tbsp baking powder
  • 1/8 tsp salt
  • Nutmeg, unsalted butter, milk, 2 eggs
  • Lemon zest
  • Blueberries

In order to cook this recipe, one must preheat oven to 425 degrees and cupcake liners need to be spread on inside the tin linings. The ingredients must be beaten in such a manner that it rises in an impressive manner. The muffins need to be baked for 25 minutes.

This is an easy to cook recipe and can be prepared even by young kids for their mothers. The ingredients like bread toast, eggs and spices are easily available at home and don’t require much time to prepare. For this recipe, a large skillet is required to bake bacon till it is crisp. Ingredients like onions, eggs, shredded cheddar cheese, Swiss cheese and cottage cheese are then mixed in the bacon mixture and left to bake for 35-40 minute. It is a perfect recipe for breakfast.
