Bhature

Serves 4-5 adults
Perfect for heavy breakfast on holidays and weekends, even for formal brunch and ‘chaat’ parties! :)

Ingredients

1/2 kg White Flour (Maida)
1 cup Sooji
400 gm Curd (Dahi)
1 tbsp Refined oil
2 tsp salt
1 tsp red chilli powder (optional)
1 tsp poppy seeds (khus khus) (optional)

for instant bhature
1 tsp yeast or baking powder

Instructions

To make instant bhature, add yeast or baking powder to the dough with all other ingredients, while kneading.

Beat curd, till smooth. Mix all other ingredients and knead with curd. The dough has to be neither too soft nor too tight. Add a little water, if required.

Cover the dough and keep it aside for 4-5 hours.

You can make bhature by deep frying them or by baking them in an oven.

Make balls from the dough and flatten them using a belan (rolling pin) in oval shapes. Deep fry them in Refined oil in a kadhai on a medium flame, or place them side by side on a baking tray and bake till ready (check in short intervals).

Serve hot with chhole / pindi chane, coriander chutney, mango pickle and onion rings.
