A lively pasta salad is great on any party table since it appeals to most palates.
serves 4-6
Ingredients
1 lb. penne pasta
2 tablespoons capers
3/4 Cup finely shredded Parmesan Cheese
1/4 Cup olive oil
3 tablespoons fresh lemon juice
1/2 Teaspoon salt
1/4 Teaspoon pepper
Instructions
Bring a pot of water with 1 teaspoon salt and 1 tablespoon oil to boil in a large pot over medium-high heat.
Add pasta and cook 8 to 10 minutes until pasta is tender.
Drain in a colander and cool. Transfer to a large bowl and add capers and Parmesan.
Whisk together oil, lemon juice, salt and pepper and pour over pasta ingredients.
Toss ingredients until coated and serve.
